Raw Snickers Bars: Recipe
Ingredients
Base layer:
2 cups blanched peanuts
1 cup cashews
1 cup pitted dates
1 & 1/2 tbsp rice malt syrup (or maple syrup)
1 tbsp coconut oil
Caramel (middle layer):
2 & 1/2 cups pitted dates
2 tbsp rice malt syrup (or maple syrup)
1/2 cup peanut butter (100% peanuts)
1 tsp vanilla
1/2 tsp salt
1/4 cup almond milk - can add a little bit extra if necessary but start with this much :)
Chocolate (top layer):
70% dark chocolate, melted (or whatever chocolate you prefer)
Crushed peanuts or salt flakes, optional
Method
Start by making the base layer. Blend the nuts in a food processor until they are all finely crushed, and then add the dates. Blend again and then add the rice malt syrup and coconut oil. It should start to form a ball and be sticking together a bit. If not, then add a little bit more of one of the liquid ingredients until it is able to hold a solid shape.
Line a baking dish with baking paper and press the base layer in really firmly. Make sure to get it pressed down as tight as you can and then set in the freezer while you make the middle layer.
For the middle layer, start by processing the dates until they are forming almost a paste. Then add the remaining ingredients and blend again. It should be quite thick so that it can hold together, but if it is too thick then add small amounts of almond milk to help blend.
Spread the middle layer on top of the base and then set in the freezer for at least half an hour (or longer in the fridge).
When it is set, you can cut it into little bars and pour the melted chocolate on top and then the crushed peanuts or salt flakes.
Make sure to let them set again for about 15-30 minutes in the fridge and store them in the fridge/freezer otherwise they will melt quickly!
